LUCUMA ICE CREAM

Without a doubt, one of the richest recipes with lucumas. Its preparation is very simple, you just have to pay attention to the measurements so that it comes out perfectly.

    Ingredients
-  3/4 kg of lucuma pulp.
-  1 ½ cups of water.
-  250 gr of sugar.
    For the Worcestershire sauce:
-  1 can of evaporated milk.
-  5 yolks.
- 125gr of sugar
-  Vanilla.
    For the whipped cream:
-  500ml of heavy cream.
-  3 tablespoons of sugar
     Preparation
1 Place the lucuma pulp, the water, ¼ cup of sugar in the blender. Process and      then pass the mixture through a strainer.
2  To prepare the Worcestershire sauce: pour the evaporated milk, the five egg         yolks and the vanilla essence into a large container. Beat vigorously or use         an electric mixer, and little by little add the sugar.
3   This preparation is brought to a simmer, it must be stirred constantly until it         takes consistency. Let it cool.
4   Now, to prepare the whipped cream: in another container, place the frozen           milk cream, and beat until it doubles in volume. Little by little the sugar is             added.
5   Next, the Worcestershire sauce is mixed with the lucuma pulp. Then the             whipped cream is incorporated with enveloping movements.
6   Place the mixture obtained in a mold and take it to the freezer for                          approximately 5 hours.
7   Remove and serve. You can decorate with chocolate chips, strawberry                 syrup,  among others.
